Sergio and José Jarquin have been growing coffee for more than 5 years in the area of Mozonte. They put their focus on quality and are always innovating new ways to optimize their production. The profiles that are created on their farm are incredibly unique and bursting with intense fruity flavours.
Their family estate, La Bendicion, is located 1500m-1800m above sea level in the zone of Mozonte in Nueva Segovia, Nicaragua. The land above 1700m is all protected forestry, preserving the agroforestry systems and biodiversity on the farm. Many varieties of coffee are planted on the farm including: Caturra, Catuai, Bourbon, Maragogype, Maracaturra, Pacamara, Geisha and SL-28. The farm has an incredibly unique landscape with one of the highest altitude growing areas in Nicaragua.
This field blend was made with the ‘Three Kings’ of coffee, Maragogype, Pacamara and Maracaturra. These coffees (the latter two of which are descended from the crossing of the Maragogype variety, Pacamara being a cross with Pacas, and Maracaturra being a cross with Caturra) are some of the largest being cultivated, rightfully meriting their name.
The Fermentation Process: Washed
After being harvested at peak ripeness, the coffee cherries are pulped mechanically, removing the majority of the fruit. The coffee is then placed in open-air tanks filled with water and ferments for 36 hours in the open air, gaining access to wild, naturally-occurring yeast. During this process, the starches break down into sugars and bring the coffee flavour alive. The coffees are finally then sun dried for 15-21 days on raised beds.
