Story
Located on the slopes of the Ngorongoro Crater, Acacia Hills Estate is a beautiful coffee farm with an interesting history and a dedication to producing outstanding coffee. The estate has been running for over 50 years and began as four smaller farms set up by German settlers in the 1930s and 1940s. These farms were combined into Acacia Hills in the 1960s, and since then, the estate has continued to grow coffee in this rich and diverse area. In 2007, local Tanzanian coffee farmer Leon Christianakis teamed up with Mark Stell from Portland Roasting Company to breathe new life into the estate with a focus on specialty coffee. Today, they harvest Bourbon and Kent coffee varieties and are trying out Geisha, Pacamara, and Castillo varieties planted at the highest elevation in the area, which is 1900 meters above sea level. A modern cupping lab on the estate helps them ensure quality and innovate within their coffee selections. The farm boasts stunning views, with its northern edge bordering the southwest slopes of Mount Oldeani, which feeds into Lake Eyasi—a significant salt lake in the Ngorongoro Conservation Area and Serengeti National Park. From the estate, you can see the rim of the Ngorongoro Crater, an ancient volcanic caldera that hosts a wide variety of wildlife, including elephants, giraffes, rhinos, lions, and leopards.
Acacia Hills has transformed from an old, underused farm into a flourishing estate that produces plentiful high-quality coffee, highlighting the unique capabilities of this region. The farm's dedication to quality is evident in every part of its process, from soil testing to choosing the best coffee varieties, all aimed at bringing out the incredible flavors that can be grown in this remarkable location.

Fermentation: Washed
The sorting of cherries starts in the field and continues at the washing station, where the cherries are pulped. The coffee then undergoes open fermentation for 12 to 13 hours, during which it is regularly monitored to control the fermentation level. After the fermentation process is complete, the coffee is washed and sorted into P1, P2, and floaters. The drying stage usually takes 13 to 16 days, depending on weather conditions, until the parchment reaches a moisture content of 12% on the drying beds. Once dried, the parchment is moved to a dry storage area.
